When plucking, the bird needs to be warm, this will produce a better finish.
If you try to pluck a cold bird you will risk tearing the skin, this applies to both mechanical and hand plucking.

For best results dip your bird in hot water as follows:

Chicken 65-70 C for 30 to 45 seconds
Duck 65-70 C for 60 to 120 seconds
Goose 65-68 C for 60 to 120 seconds
